with Shiva’s 21st-century organic chocolate barfi
Ingredients
1 cup water
10 fresh mint leaves
1-inch piece fresh ginger, peeled and finely grated
5 cloves
2 mangoes, peeled and pitted
20 ice cubes
1/4 cup organic white chocolate chips
3/4 cup plain yogurt
Scant 3 tablespoons honey
Juice of 1 lemon
Organic Milk Chocolate Barfi
Instructions
- Boil the water with the mint leaves, ginger, and cloves. Remove from heat and chill for at least 1 hour.
- Strain the chilled water into the bowl of a blender. Discard the solids. Add the mangoes, ice, white chocolate, yogurt, honey, and lemon juice to the blender and blend well. Serve very cold with the barfi.

Organic Milk Chocolate Barfi
Ingredients
1 (15-ounce) container ricotta cheese
1 stick unsalted butter
3/4 cup sugar
2 cups nonfat powdered milk
1/4 cup almonds, lightly ground
1/4 cup organic milk chocolate chips
1/2 teaspoon ground cardamom
6 sheets edible silver foil
Instructions
- Line a 9 x 13-inch cake pan with aluminum foil.
- Combine the ricotta and butter in a large saucepan over medium-low heat. Cook, stirring occasionally to keep the cheese from burning, until the mixture is wet and homogenous, about 20 minutes.
- Stir in the sugar and powdered milk and cook until the ricotta has a fudge-like consistency, about 5 minutes. Stir in the almonds, milk chocolate, and cardamom. Pour the cheese mixture into the prepared baking pan, using a spatula to spread the mixture evenly. Let cool slightly.
- Decorate with edible foil and cut into desired shapes for serving. Cover and refrigerate any remaining pieces for up to 5 days.
