Introducing Max Brenner’s New Food and Beverage Director

<p>Meet Jay Son, Max Brenner’s new Food and Beverage Director. Jay is a transplant to NYC from Ann Arbor and, of course, a culinary rock star. He comes from years in the food and beverage industry with international kitchens Le Pain Quotidien, Sweetgreen, and Simit &amp; Smith.  We sat down with Jay to get to know him a bit better and see what inspires him these days.<a href="http://maxbrenner.com/wp-blog/wp-content/uploads/2016/04/Jay-Son-1.jpg"><img class="aligncenter size-large wp-image-2094" src="http://maxbrenner.com/wp-blog/wp-content/uploads/2016/04/Jay-Son-1-1024x888.jpg" alt="Max Brenner's New Food And Drink Director, Jay Son" width="604" height="523" /></a><span id="more-2088"></span></p> <p><strong>Tell me a little about yourself: where are you from, what inspires you, where are you going?</strong></p> <p>I was born and raised in Ann Arbor, MI. and moved to NYC a decade ago.  Not to sound corny, but lately I’ve been inspired by love. I just got engaged and I have a baby girl on the way. I’ve seen that the recent dishes I’ve been slinging out of the kitchen have been hugely inspired by it. Love is a powerful emotion and when it’s at its best it can bring out the best in you.</p> <p>I don’t know where I’m going yet, but I love where I am, so there’s no rush to go anywhere else.</p> <p><strong>How did you wind up as Food and Beverage Director at Max Brenner?</strong></p> <p>It’s been a long journey to get here. I first became Food and Beverage manager for Le Pain Quotidien 8 years ago and from there journeyed to Sweetgreen right before they took off on a rocket ship to success.</p> <p>At Simit and Smith I delved more into the entire restaurant operations, signing as the executive chef and soon after taking on the role of Director of Operations. I was actually contacted by Max Brenner asking for references for Chefs that could fill the role… somehow and someway we opened up talks and a couple months later… here I am.</p> <p><strong>What’s your favorite Netflix show (or television show)? </strong></p> <p>Walking Dead.</p> <p><strong>What is your favorite menu item at Max Brenner?</strong></p> <p>Currently my favorite is the European Fondue. There’s just something so sexy about sitting down in a restaurant and sharing a nice hot fire with lots of chocolate.</p> <p><strong>What are some exciting things we can expect from Max Brenner over the next year? </strong></p> <p>Comfort foods from many different cultural backgrounds (think Southern, Hawaiian, French, Korean, Spanish, Mediterranean) and of course, a wide range of dessert and chocolate innovation.</p> <p><strong>White, Dark, or Milk Chocolate?</strong></p> <p>Dark Chocolate. There’s nothing better than the pure taste of chocolate not to mention the health benefits in dark chocolate (when eaten in moderation).</p> <p><strong>If you could chocolate cover anything, what would it be?</strong></p> <p>Bacon, Bacon, and Bacon.</p> <p><strong>What’s your favorite type of ethnic food?</strong></p> <p>Korean Food. Love Kimchi.</p> <p><strong>What do you put on your pizza?</strong></p> <p>Garlic powder, chili flakes, salt, pepper, sriracha.</p> <p><strong>What makes the world go round?</strong><strong> </strong></p> <p>Hmm. A long time ago Ollie Jones said love makes the world go round and KISS would strongly agree. Who am I to argue with KISS? Franklin B. Jones would say love doesn’t make the world go round. <p>Max Brenner has joined the fight to end AIDS with EAT (RED) SAVE LIVES. This June, we’re introducing two new specialty menu items that are sure to delight you in more ways than one.
